• Atkins Bake Mix – Atkins Cuisine Pancakes & Waffles

    Atkins Cuisine Pancakes & Waffles

    Ingredients:

    • 1 cup Atkins Baking Mix
    • 1 packet of Splenda (or sweetener of choice)
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 1 cup half and half
    • 1 whole egg

     

    Pancake Directions:

     

    Blend all dry ingredients together in a large mixing bowl. Add the half and half and egg. Whisk batter. Let the mixture sit for at least 5 minutes to activate the baking powder. Coat pan wiht non-stick spray. Cook the pancakes on the pan using medium heat. Flip the pancakes when bubbles appear on top and edges start to cook.

    Recipe makes 10, 4 inch pancakes. 3 net carbs per pancake.

     

    Waffle Directions:

     

     

    Follow the same recipe as the pancakes. Pour the batter in the center of the waffle iron. Cook waffles in iron (about 1 – 1.5 minutes or until ready).

    Recipe makes 5 waffles.  6 net carbs per waffle.
