I have gluten allergy since childhood. I am always on a Gluten Free diet and i use guar gum in some of may baked foods.

<em>Gluten intolerance is really pretty common. I think many people would be surprised to find they are allergic. Guar gum is something I use often when needing to thicken foods, like gravies and sauces - it's a good substitute for cornstarch in that way, but I don't think I've ever baked with it. Congrats on staying gluten free!

Thanks for the kind words, Amy :) I would encourage anyone with an autoimmune disease to read up on gluten and find out just how much difference it makes in your health!
