• LC Foods LC-Ice Cream

    LC Foods is a relative new-comer to the low-carb food market, but don’t let that deter you from giving their products serious consideration. Started by Glenn Frederich, who has personally lost a whopping 115 pounds on the low-carb lifestyle, LC Foods was born from his desire to find quality, healthy substitutions for the foods so many low-carbers would otherwise do without. He made it a personal challenge to create food is not only truly low-carb, but also tastes fantastic. I have to say, from what I’ve tried so far, I think he’s hit the mark beautifully. I appreciate what he’s trying to do for the low-carb community, as well as his support of this blog and the work I do here.

     

    Today I want to tell you a little bit about one of his amazing products. The LC Foods LC-Ice Cream mix is, in a word, epic. (According to my teens, epic is the new awesome, so excuse me while I get my lingo on.) It has an amazing taste. It’s a good as any store bought ice cream I’ve tried. You can eat is soft serve, which is amazing, or freeze it and enjoy it that way. Once frozen it seems less creamy, maybe more like ice milk, but still tastes awesome. (Oops! I should have said epic!) The best part about this ice cream mix is it has has only 1 net carb per 1/2 cup serving and has only 2 sugar alcohols. And before you scream at me about the sugar alcohols, let me tell you they are erythritol and are way down on the list of ingredients. I’ve actually had more than a serving in one sitting with no problems what-so-ever.  (Who REALLY only eats 1/2 cup of ice cream? That’s just a tease.) You can get it in vanilla, which I’m talking about here, or chocolate, which I have yet to try.

    Ingredients: Contains a proprietary/patent pending blend of milk protein isolates, whey protein isolates, inulin chicory root fibers, digestive resistant maltodextrin, dietary fiber, polydextrose, erythritol, sucralose, organic stevia rebaudiana leaf extract, natural lou han guo extract, salt celluose gum.

    I give this product 4 1/2 stars out of 5. It’s a nice occasional treat that you can make yourself and is perfect for the crazy hot summer days we’ve been having. It should be acceptable on most mid to late phases of any low-carb plan.

    It’s great too see a lc product hit the market using erythritol instead of maltitol.   That said, the inulin chicory root fibers are not friendly fibers in my digestive system…toottoot!!!!!  I stay way away from them.
