• Crockpot BBQ Pork Roast

    I’ve seen several ways to fix roast, but this is one of my favorites. Not only is it tasty, but there is no end to what you can do with the leftovers.

    Crockpot BBQ Pork Roast

    • 3-4 lbs of pork roast
    • 8 oz. tomato sauce
    • 1 cup water
    • 1/4 cup vinegar
    • 2 tbsp Splenda (or sweetener of choice)
    • 1 tbsp chili powder
    • 1 tsp dry mustard
    • 2 tbsp worcestershire sauce

    Instructions for preparation:

    I spray the inside of my crockpot with non-stick spray (olive oil), then place the roast on the bottom. In a bowl mix all the rest of the ingredients and pour over the roast. Cook on low 8 – 10 hours or high for 6 – 8 hours. The meat will pretty much fall apart once it’s done. (Yay for shredded pork!)

    Fat: 17 g

    Protein: 28 g

    Carbs: 6 g

    Fiber: 1 g

    Hi Amy,

    I literally read your recipe and just threw it in the crockpot. I had 2 lbs. of “pork butt southern style ribs” in the freezer. I cut the recipe in half and threw it all in! looking forward to dinner tonight! Thanks for posting!

    Hi, Amy!

    I don’t know if this issue matters as much as the Slow Cooker manufacturers want us to think that it matters, but I’ve often read that it’s important to use the right size slow cooker for the amount of food being cooked.  Apparantly it has something to do with the idea that slow cookers should be at least 3/4 full in order for the food to cook properly at the specified length of time.  So, with that in mind…what size slow cooker did you use for your 3-4 lb roast?  :)

    Hi Cheryl,
    My slow cooker is pretty big. I have this one: http://healthylowcarbliving.com/recipes/another-great-giveaway/ 
    which is a 6.5 qt. I honestly don’t know if it works best if 3/4 full, but since I only have this one cooker, I have to make it work. Most of the time I let the roast cook the full 8 hours on high. I do tend to check it around the 6 and 7 hour marks though, just incase it’s done early.

    Poop.  I’m so sorry, Amy.  I just now saw your answer to when I had asked this before. 

    Okay, you using the 6-1/2 qt. gives me hope.  That’s the size I have, so it’s good to know I’m not going to turn the roast into a piece of charcoal – lol.
