    Hey Gang! Thought I’d give you a quick update. I was on vacation all of last week. We took a trip to Las Vegas so my hubby could attend a work expo. Not the best family vacation we’ve ever taken, but it was okay.  We saw some interesting sights… including this guy, who calls himself Kotton Kandy:

    He’s a comedian that works the strip and is originally from Chicago. He was a HOOT! Check out his youtube channel for more hilarity: Kotton Kandy’s Channel. I wish him the best and I hope his act hits the big time!

    We flew out of Nashville, which is the home of our good friend Tom Naughton (Fat Head) and his wonderful family. So Monday (4-25) night we spent a few hours at their house and enjoyed a fantastic meal and even better company. We were served a wonderful dish from Judy Barnes Baker’s cookbook Carb Wars – Moussaka, pg. 198 (with some modifications by Tom), and creamed spinach, which hubby ate to my amazement. Not because it was bad, but because he doesn’t like spinach, so you know it had to be good if he enjoyed it. He even asked me later if I had the recipe. Now that’s saying something. Anyway, it was a great time and we look forward to spending time with them again soon.

    Speaking of flying, I am amazed to report that I actually have no airline horror stories to share, despite the fact we flew 4 times on this trip! (Kudos to Frontier Airlines!) The closest we came to excitement was hubby randomly being selected for the nudie scanner and my son being randomly selected for bomb residue testing. (Both took all of 5 minutes and the TSA officers were extremely nice about it all, explaining it every step of the way and being polite.) And we had a beautiful view from the air.

    Right now many low-carbers are enjoying the 4th annual Low-Carb Cruise, and I’m sure they are all having the best time! We were unable to attend this year, which was a bit depressing, but that’s how it goes sometimes. We really hope to be able to go next year and I hope you all will be there too! I really enjoyed meeting so many amazing people last year! I’ll post info on the next cruise as soon as all the details are ironed out.

    I’m currently working on a blogging schedule so that my posts here are consistent and not so scatter-brained, unlike myself. I hope to start implementing that schedule next week, although I may have to tweak it until I find what works best. I have some book and product reviews waiting to be written, as well as some of my other ramblings. I also have some good news to tell you regarding this blog, but I need to save that until it’s all set up, so you’ll have to stay in semi-suspense until then.

    Okay, off to finish some stuff up and get to bed.

    There are a lot of things I would have loved to have done while we were there, but dang it’s expensive! David Copperfield had a show in the hotel we stayed at. I would have loved to have taken my kids to see that show. He was my favorite as a kid. But for the 4 of us it was going to be almost $500! Not gonna happen… ever. lol
