• Slow Cooker BBQ Pork Loin

Posted on February 1, 2012 by in blog, Low-Carb, Recipes and Reviews

I don’t know who came up with the original recipe, but I wish I did. I’d love to give them a huge hug, not to mention proper credit here, because this has been a staple in our menu planning for a long time. It’s simple and I love that I can put it in the slow cooker around lunch and know that dinner is taken care of. I only made a minor tweak to fit our tastes. So below is my version of this amazing recipe.

    Slow Cooker BBQ Pork Loin

    • 3-4 lbs Pork Loin
    • 1 small can tomato paste (about 6 oz.)
    • 1 cup water
    • 1/4 cup vinegar
    • 2 tablespoons worcestershire sauce
    • 1 tablespoon chili powder
    • 2 tablespoons sweetener of choice
    • 1 tablespoon dry mustard

Place loin in slow cooker. Then place remaining ingredients in a medium sized bowl and mix well with a wisk. Pour over the pork loin and cook on high for 5 to 8 hours. The meat will fall part easily when done.
