• Lazy Quiche

    Everyone loves a great tasting meal.  And when it’s something that’s easy to throw together as well, it scores big points on my lazy-gauge. (Everyone has one of these, right?)  This is one of those recipes.  I threw it together when I was especially tired and wanted a comfort food kind of meal. My Lazy Quiche is great for a low-carb lifestyle and you’ll never miss the crust.  Lazy cooks unite!

    Lazy Quiche

    Serves 6

    • 1 cup broccoli, cooked and chopped into bite size pieces
    • 1/4 cup roasted red bell peppers, diced
    • 1/4 cup onions, diced
    • 1/4 cup bacon, cooked and chopped into pieces
    • 1/2 cup cheddar cheese, shredded
    • 6 eggs
    • 1 cup heavy cream
    • Salt and pepper, to taste


    1. Preheat oven to 350 F. Spray 10″ glass pie plate or baking dish with non-stick cooking spray. 

    2. Layer bottom with of pie plate with broccoli, onions, bacon, and peppers. Sprinkle cheese on top.

    3. In medium size bowl beat eggs. Then add in heavy cream, salt and pepper. Mix well.

    4. Pour egg mixture in pie pan over veggies and bake for 35 minutes or until knife inserted in middle comes out clean.

    Notes: Can use any left-over veggies you like, just adjust carb counts. This also works well with real bacon bits and will save even more time.

    I HAVE USED LOW CARB RECIPES FOR YEARS, BUT, ALSO I WATCH THE FATS AND GO FOR HIGH FIBER. ANY RECIPES?

    All of the recipes on this site will are low carb, but I believe fat is a very necessary nutritent for weight loss and health, so you’ll also find plenty of fat in the recipes as well.
