• French Silk Pie

    I. Love.  Chocolate.  I think any self-respecting hormonally distressed woman feels the same. Do you know how many marriages have been saved by chocolate during PMS? It’s truly a thing of beauty. So to celebrate the miracle that is chocolate, I’m sharing with you one of my favorite recipes.  My low-carb French silk pie, which I may just rename to Sanity-Saving, Diet-Saving, Don’t You Dare Eat The Last Piece, I Was Saving That For An Emergency French Silk Pie.

    Amy Dungan’s Low-Carb French Silk Pie

    • 2 cups heavy whipping cream
    • 1/2 of 1.4 oz package of sugar free instant chocolate pudding
    • 2 teaspoons sugar free vanilla syrup (like Davinci or Torani)
    • 2 teaspoons sugar free chocolate syrup (like Davinci or Torani)
    • 1 teaspoon decaf instant coffee granules

    In small bowl pour vanilla syrup and add coffee granules. Mix well and let sit while coffee dissolves.

    Pour heavy whipping cream into a large bowl. With a mixer add chocolate syrup, coffee/vanilla mixture, and 1/2 package of instant pudding. Mix until smooth.

    Pour into low-carb nut crust (my favorite can be found in Dana Carpender’s 500 Low-Carb Recipes) and refrigerate until well chilled. Garnish with homemade sugar-free whipped cream and sugar-free chocolate shavings (preferably made from Chocoperfection, but can use any sugar-free chocolate bar).

    Serves 8

    Net carbs without the crust: 4g
