Tonight I cooked my family their favorite high-carb meal,lasagna. It’s not something we have often, but I do make it on occassion simply because they love it so much. Obviously, it’s not something I can eat so I have to plan something else for myself. Tonight I started with browning extra hamburger, but had no idea where I was going from there. I assembled the lasagna and put it in the oven, and decided I wanted something Italian too. The following is what I threw together. You can alter the ingredients in many ways, so this is certainly a versatile dish.
Easy Italian Skillet Meal
1 lb ground beef
6 ounces tomato sauce
4 ounces sliced mushrooms
1 cup mozzerella cheese
1/2 teaspoon Italian seasoning
Salt to taste
Brown ground beef in medium skillet. Drain off grease and add tomato sauce, mushrooms and seasonings. Let heat through and top with mozzerella. Cook until cheese starts to melt (you may need to turn down the heat at this point). Serve and enjoy!
Makes 4 good sized servings.
