• Bacon Fried Mushrooms

    I’m a cookbook junkie. Come to think of it, I’m a food junkie too. So it’s really no big surprise that I’m addicted to cookbooks. I have several shelves on my bookcase in which I display my culinary reading with pride.  At least it used to be with pride, until I realized I used only very few of them and the rest were collecting dust.  I’m not a dust collector by choice, so I started weeding out the books I had no real attachment to. Over the years I have been slowly replacing the ill-favored cookbooks with those that I use and cherish.

    I’m enjoying my current collection of recipes immensely and always look forward to trying something new.  Recently I had the privilege of perusing some fabulous recipes in Jennifer Eloff’s Splendid Low-Carbing for Life Volume One. As a national best-selling author, Jennifer knows what her audience craves. One quick glance at her recipes will reveal her talent at recreating low-carb versions of the old high-carb foods you have been hankering for.  She has a great selection of recipes that are sure to be your new low-carb favorites.

    Jennifer has given me permission to share one of my favorite recipes from this volume. (There are so many to choose from. I like them all…)

    Bacon Fried Mushrooms

    • 6 slices bacon
    • 1 cup chopped onion
    • 1 ½ lbs fresh mushrooms
    • ½ teaspoon salt
    • ¼ teaspoon white pepper

    In large frying pan, fry bacon until crisp. Add onion to bacon drippings. Fry until soft. Wash and slice mushrooms; add to pan. Stir-fry mushrooms until tender. Sprinkle with salt and pepper.

    (Amy’s note: I crumble up the bacon after it’s fried and toss it back in.)

    Helpful Hint: Using only ½ cup chopped onion brings the carb count down to one gram.

    Yield: 6 Servings

    Per serving:

    75 calories

    7.4 g protein

    2.2 g fat

    6.1 g carbs

    I do this with my hamburgers. I save my bacon fat and use it to cook up my burgers. I throw in a small can of mushrooms after I am done cooking the burgers and broil the mushrooms. It absorbs the flavor of the bacon, burger and the onion. I use it as a sidedish. It is quite good this way.
